Bun B Brings Trill Burgers to Rice as a Lunch Counter

Bernard Freeman, the Houston rapper known as Bun B, walked into Rice University’s welcome-back party on Sept. 9 after Trill Burgers had already been smashing patties in the Rice Memorial Center for 23 days. Students packed the room. The brand’s cameras followed them.

The counter opened Aug. 17 for O-Week and is booked as a fall and spring semester window, weekdays only. Housing, Dining and Hospitality wanted a Houston burger on the map. What it signed is a lunch booth in a building Rice already owns.

A Weekday Window at Sammy’s Cafe

Trill Burgers told campus followers it is inside Ley Student Center at Sammy’s Cafe. Rice’s July 30 release put the same stall in the Rice Memorial Center, the paired student-center complex that also holds the campus store, the coffeehouse, and Willy’s Pub. Initial hours are 11 a.m. to 5 p.m., Monday through Friday. Dinner is not on the board. Weekends are not either.

Students, faculty, and the public can order. Guest parking is the regular campus system. The menu is the traveling set, not a Rice-only special: the OG Trill Burger with two smashed beef patties, pickles, caramelized onions, Trill Sauce, and American cheese on a Martin’s potato roll; a vegan OG; Triple OG beef and vegan; single-patty Lil G beef and vegan; and seasoned fries, sold a la carte or as a combo.

THE RICE COUNTER

• Start date: Aug. 17, 2026, during new-student orientation.
• Hours: 11 a.m. to 5 p.m., Monday through Friday, listed as initial.
• Pay: Campus Tetra for students; open to visitors on regular checkout.
• Run of show: Fall and spring of the 2026-27 year, not a listed fourth restaurant.

The brand’s own locations page still names three dining rooms, in Upper Kirby, Spring, and Missouri City. Rice does not appear there. That is the tell. This is a residency in Sammy’s, closer to a festival booth than to the Shepherd Drive store with its late-night window.

On Aug. 26 the official account posted a locator video and an Owl send-off, nine days after the first service. The post did the job a storefront sign would do on a city street.

The Brand Scaled on Festivals and Stadium Gates

Bun B, restaurateur Andy Nguyen, and Nick Scurfield started Trill Burgers in Houston in the summer of 2021 as a pandemic pop-up. The official site lists Bun B as chief burger officer and CEO, Nguyen as creative director, Scurfield as chief marketing officer, chef Mike Pham as chief operating officer, and chef Fernando Valladares as executive chef. The cook is a smash on a potato roll. The growth pattern is other people’s venues.

HOW TRILL BURGERS GOT TO A CAMPUS HALL

1. Summer 2021: The pop-up launches at Houston food events.
2. 2022: Good Morning America names the OG “Best Burger in America.” A City Hall pop-up with the City of Houston serves 2,000-plus customers in a day Mayor Sylvester Turner proclaimed Trill Burgers Day.
3. 2023 Houston Rodeo: Chefs Pham and Valladares serve more than 41,000 burgers in 20 days and take a Gold Buckle Foodie Award for best classic fair food.
4. June 7, 2023: First brick-and-mortar opens at 3607 S. Shepherd Drive, a former James Coney Island in Montrose, later treated as the Upper Kirby flagship.
5. 2023 to 2026: Concessions land at Houston Texans games, with a fourth straight season on the 2026 slate, plus stops at other Houston stadiums and at festivals including Coachella, Rolling Loud, Something in the Water, and Rock the Bells.
6. April 2025: A second restaurant opens at 6810 Louetta Road in Spring.
7. Dec. 10, 2025: A third, the first ground-up build, opens at 20220 Fort Bend Parkway, Suite 140, in Missouri City, with a January 2026 celebration.
8. July 30, 2026: Rice announces the campus counter, with a fourth Houston restaurant at 7616 Westheimer Road still listed as opening soon.
9. Aug. 17, 2026: Service starts in the student center for O-Week.

Nguyen posted the Rice news on the brand’s fifth anniversary and noted it landed on the 30th anniversary of UGK’s Ridin’ Dirty. The campus stall fits the same calendar as a stadium gate. Short hours, a crowd that is already on site, and a building someone else heats and staffs at night.

University of Houston fans already knew the model. In August 2024, Trill Burgers and Trill Tenders went into TDECU Stadium at section 138 for UH home games. That was a gameday stand, not a student-center lease. Rice is the first time the smash burger sits in a university dining room all week.

Bun B Taught Here Before He Cooked Here

Rice did not pick a stranger. Freeman served as a distinguished visiting lecturer with the Center for Engaged Research and Collaborative Learning in 2011, 2013, and 2015. He co-taught Religion and Hip-Hop Culture with Anthony Pinn, the Agnes Cullen Arnold Distinguished Professor of the Humanities. The first spring, Rice said some 250 students signed up, enough that the class met in an auditorium after a guest lecture had already drawn a crowd.

This is truly full circle for me. To bring this brand to Rice University where I once taught is a major moment for Trill Burgers and for myself.

In 2015 the pair took the class outside the hedges as a free six-week edX course, RELI157x, that opened March 24. Pinn said people off campus had been asking how to sit in. The burger deal is the commercial sequel to that same Houston-on-campus brief, which Pinn once framed as getting Rice off campus and Houston on campus.

Beth Leaver, assistant vice president of housing, dining and hospitality, called Trill a natural continuation of that tie. She also said, in the July 30 release, that she is often asked about adding a great burger option, and that the deal fills a gap in the dining portfolio. The culture story and the menu hole are the same contract.

How Students Pay for a Smash Burger

On-campus undergraduates are on Meal Plan A, which costs $3,300 for 2026-27 and covers unlimited servery meals, 15 guest swipes, and $100 in Tetra dining dollars. Tetra rolls over until graduation. Meal swipes do not. Trill Burgers takes Tetra. It is not on the graduate retail-equivalency list, which values a swipe at $13.00 at Rice Business Café, Audrey’s, Moody’s Cafe, and Curbside at the Club.

A smash burger at Sammy’s is an extra ticket on top of the unlimited plan, paid from the Tetra purse or from a card. Off-campus plans B, C, and E buy a set number of servery meals; only B and C include Tetra. Plan E includes none.

WHERE A RICE DOLLAR LANDS

Leaver has told students that dining is not run for profit and that money returns to food, wages, and kitchens. The unlimited plan itself was a fight. Housing and Dining moved on-campus undergrads to unlimited swipes in fall 2025, and the student paper spent the next year on the change. Trill does not settle that argument. It gives the Tetra balance a Houston brand to chase between 11 and 5.

Two Houston Kitchens Were Already on Campus

Rice’s July 30 release said Trill joins Houston-based Local Foods and Dandelion Cafe. The burger stall is the celebrity version of a local-vendor stack the university was already running, not the first time a city name sat on a campus menu board.

HOUSTON NAMES ALREADY IN THE STUDENT CENTER MIX

• Local Foods: A Houston restaurant already serving Rice before Trill arrived.
• Dandelion Cafe: A second Houston brand already on the campus dining map.
• Trill Burgers: The first of the three with a rapper-lecturer attached, and the one that posts the lunch line.

Leaver, who lived in Houston through the rise of Southern hip hop, said Underground Kingz helped give the city a voice, and that Rice’s dining list should match the students and the city around them. That is a real hiring filter. It is also how a dining office fills a burger gap without signing a national chain.

This partnership represents much more than bringing a popular restaurant to campus. It reflects Houston and the cultural intersections that make this city special.

She likes to call Houston the smallest big city, because someone always knows someone. In this case the someone had already graded papers on the same campus.

Dining Offices Now Shop for Local Counters

Campus dining companies have been writing the same brief in other cities. In November 2024, Sodexo Campus put James Beard chefs on five campuses, including George Mason, Cincinnati, Denver, Colorado Denver, and Colorado School of Mines, each for a set of dishes and training visits rather than a full off-campus restaurant. Aramark has run Local Restaurant Row for years, rotating city kitchens through corporate, hospital, and college accounts. Johns Hopkins Dining is moving four Baltimore kitchens in a student center on the Homewood campus, including Koshary and a Connie’s Chicken and Waffles stall.

Rice runs its own dining program, so it did not need a Sodexo matchmaker. The shopping list still looks the same: a local name students will photograph, a vegan line, and a payment hook that sits beside the meal plan instead of inside it. Fairfield even stood up a first-of-its-kind concept with chef Art Smith. The celebrity kitchen is now a standard campus SKU.

Bun B said in April 2025 that he wanted a path to HBCU campuses and named Texas Southern, next door to UH, as the kind of partner he would love. He also said UH is larger, with a booster system, and that a lot of HBCUs do not have that kind of funding. The first weekday university counter went to the private campus where he had already lectured, and where Housing, Dining and Hospitality had Tetra and a burger-shaped hole. The HBCU stand is still a wish. The Rice window is on the clock.

Welcome-Back Photos Keep the Line Moving

Rice’s Sept. 9 dispatch led on social media for a reason. Trill Burgers posted the student following from day one, and the university’s own channels had already teed up O-Week. The launch spend is the phones in the line.

That is the festival trick in a residential college. A Shepherd Drive opening needed months of wrapped sidewalks. A Sammy’s counter needs a locator Reel, a welcome-back appearance, and a dining dollar that is already on the ID. Freeman showing up on Sept. 9 closed the loop the July 30 release had written for him.

The Westheimer restaurant was still “opening soon” in that release. The Rice hours were still “initial.” Through spring, the smash burger on campus remains a weekday window with a famous name on the ticket, paid in Tetra, staffed like a booth, and amplified by the same students who used to pack the hip-hop lecture hall.
